· Plan and direct food preparation and cooking activities at the Sushi bar

· Plan menus and ensure food meets quality standards

· Estimate food preparation material requirements and estimate food and labor costs

· Instruct cooks in preparation, cooking, garnishing and presentation of food

· Arrange for equipment purchases and repairs

· Work together with the food service supervisor in food and equipment procurement

· Demonstrate new cooking techniques and new equipment to the cooking staff

· Plan menus and requisition food and kitchen supplies

· Prepare and cook complete meals and create decorative food displays for special events

· Create new recipes and plan menus

· Supervise cooks and other kitchen staff
